Make it wild

Portal is our exploration into the world of mixed culture fermentation. With the use of wild yeast, oak, stainless, and bacterial cultures we are blending together beverages that showcase our creative and most free spirited tastes. The first two releases came in collaboration with some close friends and growers of fine produce here in Central MO. A showcase of Boone County’s bounty with two fresh, yet funky fruit beers fermented with multiple strains of Brettanomyces and aged on whole fruit for close to a year. Bottle conditioned and ready for your enjoyment this weekend.

golden farmhouse dry hopped


A pale and dry base beer brewed with 2-row, red wheat, white wheat and oats build the foundation for this brett beer. Fermented with multiple strains of brettanomyces and saccharomyces in stainless, we dry hopped this beer at the end of its conditioning phase with Nelson Sauvin Hops.

Big bright, tangy notes of gooseberries and white wine from the Nelson Sauvin hops play off the fruity brettanomyces fermentation profile.

golden farmhouse with tart cherry


A golden ale fermented and aged with a mixed culture of brettanomyces and saccharomyces yeast in stainless steel. Refermented on tart cherries and blended with a Foeder aged golden brettanomyces ale. Bone dry and slightly tart. Pours deep red.

We are proud to support our local Foeder makers, Foeders crafter of America. Located just down the highway in St. Louis, MO and crafter from Missouri White Oak.

golden farmhouse with peach


A golden ale fermented and aged with a mixed culture of brettanomyces and saccharomyces yeast in stainless steel. Refermented on fresh freestone White Peaches for 8 months before being bottle conditioned in Spring 2022. The peaches were sourced from Brush and Trouble Farm in Hallsville, MO,  just 13 miles from the brewery. 

Brush and Trouble Farm also specializes in grass fed beef and seasonal pasture raised chickens, among other things.  Thank you, Noah and Jen!

golden farmhouse with raspberry & strawberry


A golden ale fermented and aged with a mixed culture of brettanomyces and saccharomyces yeast in stainless steel. Refermented on whole raspberries and strawberries for 10 months before being bottle conditioned in the spring of 2022. The fruit was sourced from Red Buds Farm in Rocheport, MO, just 14 miles from the brewery. 

Emma is a dear friend and grows all types of fruits, vegetables and wild flowers.  She provides all the wildflowers that you see in the warmer months. Thank you, Emma!
